Join Tanja to make Swiss-style hard cheese that ripens in just a few weeks. With decades of cheese-making experience, Tanja has empowered many participants to create their own hard cheese. Her 'no fuss' approach to food emphasises simplicity and enjoyment.


During this 2-hour session in our commercial kitchen, Tanja will prepare some cheese in advance for you to sample and compare. As a bonus, you will also make Paneer and learn some tips from renowned cheese-maker David Asher, who passed these on to Riverside Education when he visited last year.


Tanja will help you feel confident to replicate the cheese-making process at home while encouraging creative experimentation with base ingredients. The session includes both demonstrations and hands-on activities, allowing for moments of relaxation and engagement.

Please note that we will be using Riverside Milk which is RAW milk and may not be suitable for everyone's consumption. The Ministry of Primary Industries advises the following: ‘Raw milk may contain microorganisms that can causeserious illness. To reduce the risk of illness, raw milk should be heated to at least 70 degree Celsius for one minute. This is critical for infants, young children, the elderly, pregnant women and people with weakened immune systems.’
